Use the RSVP count, then apply a floor of 90% of on-site staff for a free catered lunch. Attendance for paid or optional meals drops to 60–70%. We recommend confirming the final figure 48 hours before the event.
How long does a corporate buffet take to serve?
One serving line clears roughly 100 guests in 25–30 minutes. For a 45-minute lunch window with 400 guests, you need at least four parallel lines, ideally double-sided.
