Menus & Food Planning

Menu planning is where most catering budgets are won or lost. A long menu is not a good menu — a well-sequenced one is. These guides explain how a traditional South Indian meal is structured, the order items are served on a banana leaf, how to build satvik and no onion–no garlic menus for ceremonies, and how to decide quantities per head so you are not throwing away a third of what you cooked.

Menus & Food Planning: common questions

How much food should be cooked per guest?
For a full South Indian meal, plan roughly 650–750 g of total cooked food per adult across all items, plus a 5% buffer. Rice runs about 150 g uncooked per head, sambar 200 ml, and each palya 80–100 g.
